Ingredients

2 fresh ham roasts (each about 2 lb.) 
kosher salt 
coarsely ground pepper

 
Directions
Liberally salt and pepper both sides of each fresh ham roast Stack the ham roasts on top of each other (piggy back style) in a large crock pot. Do not add water. Put the lid on and cook on high for 2 hours; then turn to low for 6 hours. (I usually cook them for 12 hours on low, but either way will work. 
While roasts are still in the crock pot, remove any pieces of fat and bone. Then take two forks and start shredding the meat. When meat is shredded, toss it with the forks until the juice is incorporated into the meat. The true taste of the delicious pork comes through every time. I always get rave reviews and requests for the recipe. People can't believe how simple it is!
