-Serves 4-2 cakes per person Place Pork Loin, lime juice, garlic, salt, and pepper in crock pot on high for 6 hours or until meat is falling apart. Drain excess liquid from meat. Combine 1/2 cup of bread crumbs and red peppers with meat. Then form into 4 oz patties. Whisk 3 eggs. Drench the patties in egg wash and the remaining bread crumbs. Take the olive oil and place in large saute pan and heat over medium/high heat. Place cakes into hot oil crisp up both sides till golden brown approximately 3-4 minutes on each side In same pan crisp up the green onions approximately 2 minutes. Whisk together cocktail sauce and chipotle mayo together. Last but not least, spoon on sauce and garnish with the fried green onions. Eat and Enjoy! |
