Little Boy Blue’s Blueberry Pork Chops

Ingredients

4 bone-in pork loin chops 
1 Tbsp olive oil 
Salt 
Pepper
 2 medium cloves garlic, minced 
1 Tbsp fresh thyme, minced
 3 cups fresh or frozen blueberries 
1/2 cup balsamic vinegar 
1/2 cup water

 
Directions
Serves: 4   Prep time: 10 minutes 
Heat olive oil in a medium skillet. Season pork chops with salt and pepper to taste. Brown pork chops on both sides. Set aside. 
Add blueberries, garlic, thyme, and a pinch of salt and pepper to the crock pot. Stir. Pour vinegar and water over blueberries. Place pork chops on top of blueberry mixture. Cook in crock pot on low for 6-8 hours or on high for 4-6 hours. 
Serve pork chops topped with blueberry sauce. 
Great main dish served with corn on the cob or green beans. Children enjoy this blue “ketchup.”
