6 pork chops 1/4 tsp sea salt 1 1/2 tablespoon Mediterranean seasoning, 1 cup bulgur 1/2 cup feta cheese 1 cup cherry tomatoes,quartered 1 cup chopped Italian flat-leaf parsley 1 garlic clove, minced 3 tablespoons freshly squeezed lemon juice 4 tablespoons olive oil |
Boil two cups of water, add bulgur and sea salt, remove from heat and let sit for 20 minutes. Meanwhile, with a sharp knife, cut a horizontal slit in the side of each pork chop forming a pocket for stuffing. In a bowl combine, bulgur, feta cheese, tomatoes, parsley,garlic, lemon juice and 2 tablespoons of olive oil .Stuff each pork chop with tabouli and close with toothpicks. Drizzle the pork chops with the remainder of the olive oil and then season with the Mediterranean seasoning. Place pork chops on a metal rack, inside the crock pot. Cook on low for 8 hours. |
