Spiced Cider Pork & Potato Platter

Ingredients

1 tablespoon olive oil 
1 (4 – 4 1/2 lb.) fresh boneless pork loin roast, well trimmed 
1 1/2 teaspoons salt 
4 medium sweet potatoes, peeled and quartered 
1 large onion, coarsely chopped 
1 1/2 cups apple cider 
3 tablespoons Dijon mustard 
1/2 teaspoon cayenne 
1/8 teaspoon ground cinnamon 
1/2 teaspoon black pepper 
1/4 teaspoon ground coriander 
1/8 teaspoon ground nutmeg

 
Directions
Spread oil on inside of a 6-quart slow cooker. Sprinkle pork with salt. Place in slow cooker. Place potato quarters then onion on pork. Stir remaining ingredients together in a medium bowl. Pour carefully over potatoes. Cook on high for 3-4 hours or until pork is done and potatoes are fork tender. (Do not stir.) 
To serve, use a slotted spoon to remove pork and vegetables to a large platter. You may thicken remaining liquid from slow cooker with cornstarch for gravy if desired. 
Garnish if desired. 
Serves 8.
