Root Beer sauced Pulled Pork

Ingredients

1 3lb. boneless center cut pork roast 
1 lg. onion sliced and separated into rings
 salt/pepper 
3 cloves garlic crushed
 6 12oz cans of diet root beer(2 for sauce) 
4 bottles chili sauce 
1/4 tsp. root beer concentrate
 hot pepper sauce 
hamburger rolls

 
Directions
Trim fat from meat. Season meat with salt and pepper. Place meat in crock cooker. Top with onions and garlic.Pour diet root beer over roast to cover. Cook on High setting 4-5 hours or Low setting 7-8 hours. 
Meanwhile, for the sauce, in a deep sided pan combine 4 bottles of chili sauce and 2 cans or bottles of diet root beer. Bring to a boil. Boil gently uncovered,stirring occasionally for 25 minutes.Add root beer conc. and hot pepper sauce as desired. 
Transfer cooked roast to carving board. Remove onions from juices. Using 2 forks pull meat apart into shreds. Add shredded meat to sauce. 
Serve on hambuger buns with reserved onions.
