Lynn Roche's Inspired Pork Butt Recipe

Ingredients

1 3-4lb. pork butt roast 
1/2 c. dijon mustard 
1 c, brown sugar 
1/2 tsp. wostershire sauce 
1/2 tsp. salt 
1/2 tsp. pepper 
1 tsp. paprika

 
Directions
Set crockpot to low. Prepare Pork butt roast by scoring the exterior (Make 4-5 2 diagonal slashes with a knife, all around the outside of the roast.) 
Mix all other ingreients and blend well. Place Butt roast into the crockpot. Baste with about 1/2 of glaze. Cook 3 hrs., then glaze again with 1/2 of what's left. Cook 2 more hours and check for tenderness. Pork Butt roast should fall apart when flaked with a fork. 
Remove roast from crockpot and shred with a fork into a serving/baking pan. Drizzle with remaining glaze. 
Serve with potato rolls and coleslaw. May top pork on roll with 1/8 c. coleslaw (deli variety). Enjoy!
