Healthy Pork Lo Mein

Ingredients

1 1/2 lb boneless pork chops, cut into 1" x1/4" strips 
1/4 tsp salt 
1/2 tsp pepper 
1/2 C hoisin sauce 
1 C chopped onion 
1 1/2 C carrot sticks, cut into 1" x 1/4" pieces 
1 (12 oz) bag frozen cut green beans or mixed oriental veggies 
3/4 C cashews 
1/2 C diet cola 
14.5 oz box of high-fiber spaghetti noodles 
Optional: 1/2 C chopped green onions for garnish

 
Directions
Spray crock with non-stick spray. Place pork in bottom of crock. Season with salt & pepper. Add hoisin sauce and stir. Add onion, carrots, frozen veggies and cashews. Cover with diet cola. Cover and cook on high for 4 hours. 30 minutes before serving, prepare noodles according to package directions and drain well. Add to crock and stir well. Continue cooking another 30 minutes. 
Serve with a sprinkle of green onion if desired.
