Season tenderloin all over with salt and pepper. Place tenderloin in crock pot. In small bowl, whisk together remaining ingredients. Pour over tenderloin. Cook on LOW 8 hours. Remove tenderloin from crock pot and finely shred meat between 2 forks. Return shredded meat to crock pot and stir well to blend with sauce. To serve, spoon pulled pork down centers of warmed flour tortillas. Offer diced avocado, lime wedges, chopped cilantro, mashed pinto beans, minced hot peppers, plain yogurt, and sliced green onions as accompaniments. |
