Orange-Chipolte Country Style Pork Ribs

Ingredients

3 lbs boneless country-style pork ribs 
1 teaspoon salt 
1 teaspoon ground pepper 
1 (16-ounce) jar of orange marmalade 
3 chipotle peppers in adobo sauce, finely chopped 
1 cup chopped onion 
3 cloves garlic, minced 
1/2 cup chopped cilantro leaves

 
Directions
Remove visible fat from ribs and season lightly with salt and pepper. Place ribs in 4 quart slow cooker. In a medium bowl, prepare sauce by mixing marmalade, chopped chipotle peppers, onion and garlic together. Pour sauce over ribs. Cover slow cooker and set on low-heat for 7-8 hours. 
After cooked, transfer ribs to serving plate. Stir up sauce remaining in pot and drizzle some over ribs. Sprinkle with chopped cilantro leaves. 
Serves: 6 - 8
