Chinese Pork Roast with Plum Ponzu Sauce

Ingredients

1 (3 lb) boneless whole pork loin roast 
10 ounces Chinese plum sauce 
3 garlic cloves, peeled & smashed 
2 tablespoons grated fresh ginger 
1 tablespoon chili paste 
1 tablespoon balsamic seasoned rice vinegar 
2 tablespoons ponzu citrus seasoned soy sauce 
2 teaspoons toasted Asian sesame oil 
4 teaspoons cornstarch

 
Directions
Spray crock pot with cooking spray and add the pork roast. In a small bowl, combine the plum sauce, garlic, ginger, chili paste, balsamic seasoned rice vinegar, ponzu, and toasted sesame oil. Mix in the cornstarch. Pour the plum ponzu sauce mixture over the roast. Place lid on crock pot and cook on low 8 hours. 
When roast is cooked all the way through, remove from slow cooker to a platter, cover with foil and let stand 10 minutes. Pour the cooking liquid into a bowl and let stand 10 minutes, then skim any fat from the surface. 
Slice roast and serve the plum ponzu sauce on the side. 
Serves:8, prep time: 15 minutes, slow cooker time: 8 hours
