Cut the tenderloin in half crosswise and season with salt and pepper. In a bowl, combine sugar, water, wine and garlic in a bowl and stir until the sugar is dissolved and set bowl aside. Place the pork, onions, thyme and figs in the crockpot. Pour mixture sugar/wine mixtureover the pork, turning to coat. Spread garlic over the pork, leaving as much on top of the roast during cooking as possible. Sprinkle with some more salt and pepper. Cover slow cooker and cook on low setting for 3 hours. Serve with cooking liquid on the side. |
