Thyme for Harvest Apple Cider Pork Stew

Ingredients

1/2 teaspoon salt 
1/2 teaspoon dried thyme 
1/2 teaspoon black pepper 
1-1/2 pounds boneless pork shoulder, cut into 1-inch cubes 
1-1/2 Cups frozen carrot coins 
2 large unpeeled potatoes cut into quarters 
1/2 Cup chopped sweet onion (Like Mau, Vidalia or Texas Sweet) 
1 medium cooking apple, peeled, cored, and chopped into small pieces 
2 Cups apple cider 
1/2 tablespoon vinegar 
3 Tablespoons flour 
1/4 Cup water

 
Directions

6 Servings 
Combine salt, thyme, pepper, and meat cubes. Put carrots, potatoes, onion, and apple in a slow cooker. Top with meat. Combine apple cider and vinegar and pour over meat and vegetables. Cook on low heat for 8 hours. 
Then, blend flour and water in small saucepan, stirring with a whisk until smooth. Drain hot liquid from cooker and combine with flour mixture over low heat, stirring until thickened to gravy consistency, taste and adjust seasonings as needed.. 
Combine with meat and vegetables and serve.
