4 double pork loin chops Salt and black pepper to taste 1 can of whole kernal sweet corn, drained 1 large green bell pepper, chopped 1 cup seasoned bread crumbs 1 small yellow onion, chopped 1/2 cup uncooked long-grain converted rice 1 8-ounce can of tomato sauce |
Cut a pocket in each pork chop, cutting from the edge nearest to the bone. Lightly season the inside pocket with salt and pepper. Combine corn, green pepper, bread crumbs, onion, and rice in a large bowl. Toss well. Stuff the pork chops with this vegetable and rice mixture. Secure the pork chops along the fat side of each chop with wooden toothpicks. Place any remaining veggie and rice mixture into your slow cooker. Add stuffed pork chops to your slow cooker. Moisten the top of each pork chop with tomato sauce. Pour any remaining tomato sauce over the top. Cover your slow cooker and cook on low for eight hours. Enjoy! |
