Fall's Harvest Pork Roast

Ingredients

1/2 medium lemon, sliced 
1/2 cup dried cranberries 
1/3 cup golden raisins 
1/3 cup unsweetened apple juice 
1 tsp. minced garlic 
1/2 tsp. dry ground mustard 
1 boneless whole pork roast(about 3 lbs) 
1/2 tsp. salt 
1/4 tsp. pepper 
1/4 tsp. ground ginger 
1 medium apple, peeled and sliced

 
Directions
In a small bowl combine first 6 ingredients, set aside. Sprinkle roast with salt, pepper, and ginger. Put roast into a 3-qt. slow cooker. Pour cranberry and raisin mixture over the roast. Place apple slices around the roast. Cover and cook on low 8-9 hours. 
Let roast set for 10 minutes before carving. Pour harvest sauce over pork.
