Maple Chili

Ingredients

2-2 1/2 LB Pork Roast (boneless) cut into bite-size pieces, with most visable fat trimmed off 
2: 14.5 oz cans Italian Stewed Tomatoes 
1: 8 oz can Tomato Sauce 
2: 15 oz cans Red Kidney Beans; drained & rinsed 
1: Medium Zucchini, cut into a medium dice 
1: Medium Yellow Pepper, julienned 
1: Medium White Onion, diced 
1/2 cup Maple Syrup 
1 tbsp Cinnamon 
2 tbsp black pepper 
4 tbsp salt

 
Directions
 Prep Time 30 minutes Cutting up vegetables & pork. Put pork in large bowl and toss with maple syrup to coat. Cook Time: 6 Hours Directions: Put syrup coated Pork into crock pot; followed by zucchini, yellow pepper, white onion. Mix thoroughly. Add stewed tomatoes & tomato sauce. Stir again. Add Cinnamon, pepper and salt. Stir one more time. Set crock pot to High Heat for 6 hours. Stir occasionally throughout the cook time (if possible). When done, the pork should be very tender and moist. Options: If you like the chili less thick (runnier), add 1 cup of water prior to cooking.
